Coriander seed
When the cilantro plant bolts, or finishes its viable growth cycle, it creates little round fruits at the tops of its stalks that dry hollow; those little fruits are the coriander seed. Coriander tastes citrusy, warm, and savory. It's best ground fresh and can be easily ground in a pepper grinder or small coffee grinder.
