Lemongrass

Use this light, bright dried herb in tea, soup or even your bath. Although lemongrass is familiar to most people because of its inclusion in Thai food, you'll enjoy it simmered with ginger and lemon as a tea. Add a little honey and you'll have an herb tea or tisane that's delicious hot or iced.

You can also easily make infusions with lemongrass. Add it to water, a neutral oil, or even simple syrup in order to make an infusion.

 If you cook with lemongrass, remove it before you eat the dish, but even when you do, the lemongrass will leave behind a citrusy, bright, slightly woody smell and taste.
