Nigella Seed aka Kalonji, Charnushka, Black Seed
1 to 4.5 ounces. This is the seed of the plant commonly known in the US as love-in-a-mist. It's a spice used all over the world in the present and found in recipes from Ancient Egypt. In India, it's known as black cumin or kalonji. In Eastern Europe it's charnushka. The seeds’ sharp, bright, and slightly bitter flavor provides a counterpoint to the milder flavors of foods such as lentils, potatoes, and bread. For best results, toast or temper in oil or butter.
These organic seeds can be used on flatbreads in the place of sesame seeds or in rye bread in place of caraway. Indian cuisine uses them widely in dals and pickles, as well as for healing uses.
