Tandoori Masala
Although you may not have a tandoor (clay oven) in which to cook your chicken or paneer or potatoes, you can use this lovely masala (spice blend) either on its own as a dry marinade or blended with yogurt as a wet marinade, then grill or roast or braise your chosen ingredients.Think of this masala as a smoky, sweet, aromatic barbeque rub. There's brightness from the chilies and ginger, earthy depth from the coriander, cumin, and cloves, and tartness from powdered pomegranate seeds and powdered green mango. Use it as a direct rub or mix it with yogurt for a marinade or dip.
