West Indian Curry

This bright, beautiful masala contains many of the spices usually associated with an Indian masala: turmeric, coriander, cumin, ginger. It also contains sweet spices such as allspice and cinnamon. This blend has a hearty kick.

Use it on grilled chicken, or in a vegetable stew. We like to use chicken thighs, yellow potatoes, sweet potatoes, and tomatoes. We toss the chicken with salt and this curry, sauté some onion and garlic, add the potatoes, tomatoes, and a little bit of water, and cover tightly.
